Rosemary Olive Crackers

People often ask why a designer would own their own bar and restaurant. But what better way is there to develop your work, then to work in your design? What works on paper does not always translate well into reality. A designer can learn so much by studying how her space is used. And for every problem there is a design solution.

On the menu at The Antlered Bunny were delicate handmade olive oil crackers served in a block of wood with five grooves cut with a circular saw to fit the crackers perfectly. We had them made by our friend and regular David who’s workshop was just down the street. Not only were they functional they were also a great conversation starter which is imperative in a small bar. Prep time: 30 minutes

Yields about 30 crackers

INGREDIENTS

205g / 1 1/2 cups flour

40g / 1/4 cup black sesame seeds

2 tbsp granulated sugar

1 1/2 tsp dried rosemary (reduce to 1 tsp, if using fresh)

1 tsp baking powder

3/4 tsp salt

60g finally grated Parmesan

1/2 tsp freshly grated black pepper

115g / 1/2 cup cold water

52g / 1/4 cup olive oil

about 1 tbs Malden salt flakes for sprinkling

RECIPE

Preheat ove to 160ºC / 320ºF.

Mix all dry ingredients in a mixing bowl until evenly combined.

Add the oil and water and mix until combined.

Roll a walnut sized ball (about 20g) and place on a baking sheet lined with Silpat or baking paper, and using a short rolling pin or a cylindrical bottle roll the ball in two directions, ie. up and down, but not side to side, until it is no thiner than the sesame seeds.

Repeat with the remainder of the dough.

Bake for 8 minutes. If the edges are not evenly golden, rotate the baking sheet and bake for an additional minute. Repeat until the crackers are perfect, keeping a close eye on the progress as they can burn easily.

Remove from oven and sprinkle a pinch of salt flakes over each cracker.

Allow to cool before gently removing from the baking sheet.

Fresh is best, but crackers can be stored in an air-tight container for a couple of weeks.

These crackers make a perfect compliment to a well curated cheeseboard.
